Three-in-One Cooking

You know, today has been packed to the brim and I’m loving it! I stayed late at work because we’re on deadline and not anywhere close to being done. I’m really lucky to work with a team that does an excellent job so no one is really worried about not getting the work finished but a deadline certainly does light the necessary fire under the necessary butts.

On top of work craziness, Will and I are going to Austin this weekend. Why? Well eventually we want to move out of Southern California and recently we’ve started to make a real effort to pick where that new place will be. We’d like to be relocated within the next couple of years at most. Hopefully within a year. But we’ll have to see. Nothing has been decided yet. Which brings us back to the trip. We are going down there for a weekend to see if it’s somewhere we might like (it tops our list right now). As Will’s dad puts it, “If you don’t like Austin, you’ll be the first 20-somethings not to.”

Unfortunately we have to pack all of that into one weekend and even more unfortunately, we are poor so there is a bit of difficulty added in order to make things cheaper. For one, we are flying into DFW and borrowing Will’s parent’s car so we don’t have to rent one. While that saves us some cash (and DFW was cheaper than Austin), we have to add a three hour drive on to Saturday. I leave work tomorrow, we drive to LAX, fly to DFW, get a few hours of sleep then drive to Austin. Whew.

Because of all that, I knew I needed to pack a dinner/heavy snack for tomorrow evening. I don’t know about you but airport food is really now acceptable. Plus who knows how long it will take to get up to LA in Friday afternoon traffic.

So snacks were purchased!

Trail mix for me (another thing I have a dangerous addiction to) and pistachios for Will.

I’ll let Will fend for himself in the airport but I’m packing my dinner. So while I made dinner for tonight and lunch for tomorrow, I also made a tomorrow’s dinner. Three in one!

Avocado, cucumber and red pepper hummus. I’ll grab it from the fridge when I come home tomorrow afternoon and eat in the car on the way up to LAX so I’m not worried about it needing to stay cold.

While that was being prepped, I had tonight’s dinner on the stove.

I really only wanted one thing.

Mushrooms! So that’s what dinner became.

Okay, okay. Mushrooms alone don’t make a full dinner. So I had them over some quinoa (protein plus carb) and some extra red pepper hummus spooned over the top for additional protein (but mostly just for fun).

And, as always, I just doubled dinner to give me tomorrow’s lunch. I added some extra veggies though since tomorrow’s dinner won’t have too many.

All together, I’m packing the trail mix, pistachios, the sandwich, a pear, an orange and a slice of my chocolate espresso banana bread. I’ll space it out of the course of the evening because flying = boring and when I’m bored, I eat.

Unfortunately my to-do list for tonight is no where near done. I need to

  • pack
  • arrange parking at LAX
  • pick up a few things at CVS
  • go over Anni’s stuff with her care taker for the weekend
  • call my grandma back

And I think I should get some sleep in there too because it’s going to be awhile until I have a chance again. I better get on it!
